Taco Soup


This is great for those cold days when you would like something to warm you up. I use my crock pot that I got through Home and Garden Party. It can go into the oven, microwave & dishwasher. You can also make it on the stove top, but not in this container.
1 lb ground beef, browned and drained
1 packet taco seasoning
1 can whole corn
1 can diced, italian style tomatoes
1 can red kidney beans (drained)
1 can black beans (drained)
1 can pinto beans (drained)
After draining beef, pour into the crock pot. Then add seasoning, corn & tomatoes. At this point I stir it to get the seasoning mixed in well. Then after draining the beans, add each or them and stir one more time befor you put on the lid. Cook in the micowave for 15 miutes. Be careful when you pull it out, it is realy hot.
I serve this with cheese and Fritos. Love it!


Slow Cooker Roast


This one is not fast, but it is super easy. My favorite day to make this is on a Sunday, because I can start it before church and when we get home the house smells great and a great meal isn't too far off.
Slow Cooker Roast
about 4 lb. roast.
1 - 2 cans beef brooth
potatoes (Can be diced for roast or mashed seperately.)
baby carrots - sliced
onions - diced
tomatoes - diced
celery - sliced
salt & pepper - to taste
McCormick Montreal Steak seasoning - to taste
(Anything else that suits your fancy.)
Heat a shallow pan to high. Quickly seer the roast on all sides until brown. This seals in moisture and gives the meat good color. Place the roast in your slow cooker and place the vegggies in around it. Sprinkle with seasonings. Pour beef brooth in over everything until it is almost covered. Set the temp to high and cook for 6 - 8 hours. I like to make it with home made bread and mashed potatoes.
